Chocolate Chip Oat Pancakes

Who doesn’t love pancakes? I have always loved them but will find myself hungry an hour after eating. These pancakes are loaded with fiber and protein, so you will not find yourself looking for a snack an hour after breakfast. You will also know that your kids will not have rumbling tummies in the middle of class.

 

The Power Of Oats

If you haven’t heard or read the claims about whole grains, let me tell you a bit about them here:

  • “Diets rich in whole grain foods and other plant foods and low in total fat, saturated fat, and cholesterol my reduce the rich of heart disease and some cancers.”

  • “Low-fat diets rich in fiber-containing grain products, fruits and vegetable may reduce the risk of some types of caner”

  • “Nondigestible food ingredients such as dietary fibers that proved food for gut bacteria to grow in; may improve gi health and immune function”

The bottom line of these scientific claims, is that consuming whole grains, such as oats, can aid in digestion, help reduce the risk of heart disease and certain cancers (when paired with on overall healthy lifestyle), and provide your GI tract with prebiotics.

The Power of Protein

It can be a challenge to get a good amount of protein at breakfast. In this recipe, we have substituted the all-purpose white flour for ground oats and added in some non-fat greek yogurt. These two substitutions increase the protein, which keeps our bodies full and focused through the day.

Chocolate Chip Oat Pancakes

  • 2 cups ground oats

  • 2 tsp baking powder

  • 1 tsp kosher salt

  • 1/2 tsp ground cinnamon

  • 1/4 cup brown sugar

  • 3/4 cup non-fat greek yogurt

  • 1 1/4 cup non-fat milk (or milk of your choice)

  • 1 egg, lightly beaten

  • 1 tsp vanilla

  • 1/2 cup chocolate chips

In a large bowl, combine ground oats, baking powder, salt, cinnamon and brown sugar. In a medium bowl, combine, greek yogurt, milk, egg and vanilla. Whisk to combine. Add the yogurt mixture to the oat mixture. Using a spatula, fold the wet ingredients in to the dry. Add chocolate chips, stir to combine, and let rest for 5-10 minutes or until bubbles start to appear on the surface.

In a skillet over medium heat, add a small amount of oil or butter, scoop 1/3 cup of pancake mixture into pan. Let cook until the edges of the pancakes start to darken.
